About Antonio Chiodi Latini

He is versatile, in love with the Earth, creative. Antonio Chiodi Latini is also a curious person, an essential quality for those who do his job, a chef. After spending his life to improve his knowledge of the great Italian and international cuisine, he decided to change his way. He embraced a philosophy that he doesn’t love to define vegan, but “vegetable creative”.

He aims to reach the taste beyond any definition, mixing ingredients that come from respectfully cultivated lands, sometimes close and some others a little bit farther. Antonio Chiodi Latini always follows the path of simplicity, even in those preparations that seem complex. He always tries to preserve the original taste of the raw materials and above all to use them entirely, to make his cuisine responsible, sustainable, and circular.
